Beef Chili









1 Onion (chopped)

1 Lb of Ground Beef (exclude if vegetarian desired)

4 Cloves of Garlic

1 Green Bell Pepper (chopped)

1 Red Bell Pepper (chopped)

1 Yellow Bell Pepper (chopped)

1 Pint of Tomatoes (chopped)

1 Tbsp of Chili Powder

1 Tbsp of Chipotle Powder

1 Tbsp of Garlic Powder

1-2 Sweet Potatoes

1 Cup of Bone Broth (optional)

1 Can of Kidney Beans (rinsed)

1 Can of Black Beans (rinsed)

1 Can of Pinto Beans (rinsed)

1 Cup of Frozen or Fresh Corn

Optional Adds: Cheese, Sour Cream, Chives, Avocado, Greek Yogurt, Cilantro, Lime

1) In a Dutch Oven, add onion and beef. Make sure to break up the meat as you cook and when it's about half done, add the garlic, bell peppers, tomatoes, chili powder, chipotle powder, garlic powder, and sweet potatoes. Let cook for about 7 minutes stirring from time to time to make sure it doesn't burn at the bottom. Then add the chicken or beef bone broth.

2) Let the mixture cook on low/almost simmering for about 10 minutes and then add the corn. Cook for another 5 mins and when the potatoes are firm but soft (easy to pierce with fork), your chili is ready! The longer the chili sits, the better the taste!
