Lemon Arugula Salad
1 Bag of Arugula
2 Tbsp Lemon juice (1/2 lemon squeezed)
2 Tbsp Olive Oil
2 Tbsp of Pine Nuts
2 Tbsp of shaved Parmigiano Reggiano cheese
Salt & Pepper (optional)
1) Add pine nuts to a pan to roast on the stove for about 5 mins until they are slightly browned
2) Empty bag of arugula into bowl and add lemon juice, olive oil, salt, pepper, pine nuts and Parmigiano Reggiano and toss the mixture until everything is coated with the lemon juice and oil.
3) Enjoy!
