Pork Tenderloin & Brussel Sprouts
1-2lbs Pork Tenderloin
4 Tbsp Olive Oil
2 Tbsp Smoked Paprika
2 Tbsp Thyme
Salt & Pepper to Taste
6 Cloves of Garlic (thinly sliced or minced)
1 Bag of Brussel Sprouts (cut in halves)
1) Set the oven to 450 degree Fahrenheit. Coat pork tenderloin with 1 Tbsp of Olive Oil and the smoked paprika, thyme, salt and pepper.
2) While the tenderloin is sitting in the marinade, prepare the garlic and brussel sprouts.
3) Heat an oven safe pan (I use cast iron) and add olive oil and sear all sides of the pork tenderloin for several minutes until just browned on the outside. Add the garlic and brussel sprouts in the pan with the tenderloin in the middle.
4) Add the pan in the oven for about 15 minutes or until the tenderloin reaches 145 degrees Fahrenheit internally. The brussel sprouts should be tender at this point but if you would like them a bit more cooked, you can remove the tenderloin to rest and pop the pan with the sprouts back into the oven for a few more minutes.
5) After the tenderloin has rested for a few minutes, cut into 1/4 inch slices and serve with the brussel sprouts!
