Turkey Chili



1 Yellow Onion (chopped)

2 Tsp Olive Oil

1 lb Ground Turkey

6 Cloves of Garlic (minced)

1 Red Bell Pepper (chopped)

1 Green Bell Pepper (chopped)

1 Large Sweet Potato (chopped small cubes)

1 Tbsp of Chili Powder

1 Tbsp of Chipotle Powder

1 Container of tomatoes (chopped)

1/2 Cup Chicken Stock

1 Can of Pinto Beans (rinsed)

1 Can of Black Beans (rinsed)

1 Can of Kidney Beans (rinsed)

1/2 Frozen or fresh Corn

Option Adds for Serving: Cheddar Cheese, Avocado, Sour Cream, Greek Yogurt

1) Add olive oil and onion into Dutch oven. After about a minute, add ground turkey. 


2) While the turkey is browning, start adding the garlic, bell peppers, sweet potato, chili powder, chipotle powder and tomatoes. Let that cook for about 5 mins on medium heat making sure to mix so nothing burns.

3) Add chicken stock and all the beans. Let that cook at low heat for 15 mins. Once the potatoes are tender, add corn. Serve with shredded cheddar, avocado, sour cream and/or Greek Yogurt.
