Chicken & Sweet Potato Bake

2 lbs of Chicken Thighs
5 tbsp Olive Oil
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Italian Seasoning
1 tsp Paprika
1-2 Sweet Potatoes
1 Bunch Mustard Greens
2 Cloves of Garlic (minced)
Salt & Pepper

1) Set oven to 400 degrees Fahrenheit. In an oven safe dish, quickly drizzle some olive oil and spread out the chicken thighs and sprinkle garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper on both sides. 

2) Chop up sweet potato into small 1/4 to 1/2 inch cubes and distribute them evenly around the chicken things in the same dish. Drizzle olive oil over sweet potatoes and chicken as well as salt and pepper. Put the dish in the over for about 30 mins until chicken internal temp is 165 degrees Fahrenheit. 

3) While chicken and sweet potatoes are cooking, chop up washing mustard greens into bite-sized pieces and add to hot pan with some olive oil. Also add some minced garlic and toss the greens for about 5-10 mins until they are wilted.
